A Rainbow of Vegetables

At Healing Meals Community Project, we recommend eating a rainbow of vegetable colors! Each different color carries a different blend of phytonutrients that are essential for our health– eating through the rainbow of vegetables and fruit can help improve and maintain our health. 

Though all the colors of the rainbow are important, GREEN vegetables are one of the most important. Green vegetables like kale support our liver which is the organ in our body that supports detoxification. Detoxification is our body’s ability to break down and get rid of toxins. 

Kale, in particular, packs a punch of nutrition! It provides antioxidants, an array of vitamins and minerals, and has been shown to support eye health and may even reduce the risk of certain types of cancer. In a nutshell, Kale is the poster child for our founding principle: Food is Medicine!

Kale & White Bean Soup

Ingredients:

2 tablespoons extra virgin olive oil

1 small yellow onion, diced small

2 carrots, diced small

2 stalks celery, diced small

1 garlic clove, minced

1 bunch kale, trimmed and chopped

1 quart vegetable broth (or Nourishing Broth!)

1 teaspoon apple cider vinegar

2 cans cannellini beans, drained and rinsed

2 teaspoons paprika

1 pinch red pepper flakes

1 teaspoon sea salt

Instructions:

  1. Heat olive oil in a soup pot. When heated, add garlic, pepper flakes, paprika, carrots, celery, and onion and sauté until fragrant. 
  2. Add vinegar, broth, kale, and half of the beans, bring up to a boil, then reduce to a simmer.
  3. Once vegetables are soft, add the remaining half of the beans and simmer for an additional 15 minutes.
  4. Season to taste, then remove from heat.
