This delicious and nourishing soup is a staple in the Healing Meals kitchen! Imagine 70 pounds of butternut squash–yikes, that’s a lot of peeling.
If peeling winter squash is challenging for you, you can cook the squash whole in the oven at 425 degrees F until wrinkled and very fork tender, then let cool.
Once cooled, you can peel and deseed, then add to soup and follow regular instructions.
This is a great way to incorporate some of the winter squash that have thicker skin like pumpkin or acorn squash which make a really yummy variation of this soup.
If the soup is too thin after blending, you can also add some drained/rinsed cannellini beans to soup before blending. This will very likely make the soup more bland so you will need to adjust the salt and maple syrup. Ideally, the soup should be savory with a hint of sweetness!
