How To Receive Meals
Harvest Minestrone Soup

Servings: 4-6
Ingredients:
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 onion, chopped
- 1 garlic clove, minced
- 2-3 whole seasonal vegetables (examples: zucchini, squash, potato, kale, broccoli, asparagus), chopped
- 1 ounce baby spinach
- 28-ounce canned diced or crushed tomatoes
- 2-quarts vegetable broth
- 2 Tbs lemon juice
- 1 can beans, drained and rinsed (examples: kidney, cannellini, chickpea)
- 1 ½ tsp sea salt
- 1 tsp Italian seasoning
- ½ tsp ground black pepper
Directions:
- Heat oil in bottom of large soup pot. Add onion, celery and carrot and saute until tender. Add garlic and continue to saute for additional 1-2 minutes until fragrant.
- Add remaining ingredients except spinach, bring to boil, then reduce to simmer and cook for 1+ hours until slightly reduced and fragrant.
- Remove from heat, gently stir in spinach, and serve.
