Harvest Minestrone Soup

Servings: 4-6

Ingredients:

  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 2-3 whole seasonal vegetables (examples: zucchini, squash, potato, kale, broccoli, asparagus), chopped
  • 1 ounce baby spinach
  • 28-ounce canned diced or crushed tomatoes
  • 2-quarts vegetable broth
  • 2 Tbs lemon juice
  • 1 can beans, drained and rinsed (examples: kidney, cannellini, chickpea)
  • 1 ½ tsp sea salt
  • 1 tsp Italian seasoning
  • ½ tsp ground black pepper



Directions:

  1. Heat oil in bottom of large soup pot. Add onion, celery and carrot and saute until tender. Add garlic and continue to saute for additional 1-2 minutes until fragrant.
  2. Add remaining ingredients except spinach, bring to boil, then reduce to simmer and cook for 1+ hours until slightly reduced and fragrant. 
  3. Remove from heat, gently stir in spinach, and serve.
